Coconut Cupcakes
So I wanted to make these since I found the most gorgeous coconut flakes from Bob's Red Mill here in Oregon. I didn't have a lot of time so I "cheated" and used a box mix....I know, I know but sometimes you just have to. So I used a white cake mix and substituted coconut milk for the water and oil (because we know how fattening coconut milk can be) and used 3 egg whites as the box asked for.
I made mini cupcakes for my husbands work. and used my new pancake pen to fill the wells. It was a great find at Williams and Sonoma and can be used to make pancake shapes too. Baked at 350F as the box suggested.
I topped it with french buttercream flavored with a little bit of left over coconut milk and dipped them into a bowl filled with coconut.

My #1 taste tester agreed they were delicious.
