I saw these amazing cupcakes over at Ucreatefoods and I just had to try to make them. I mean Chocolate chip cookie dough and a cupcake....Yummy.
Here is a link to the filling and cupcake. The filling looks and tastes EXACTLY like cookie dough without the threat of Salmonella from raw eggs. After baking and cooling the cupcakes I cored out the middle and added filling.
Brown Sugar Cookie Dough Frosting3 sticks unsalted butter, room temp.3/4 c. light brown sugar, packed
1 lb. box powdered sugar
1/2 tsp. coarse salt
3 TBSP milk
2 and &1/2 tsp vanilla
mini chocolate chips
Cream the butter and brown sugar with the paddle attachment until fluffy. Add in the powdered sugar and beat on low until incorporated, then increase the speed and beat until smooth and combined. Add the salt, milk and vanilla; blend until smooth.
I added the mini chocolate chips to the frosting and then sprinkled the tops with Chocolate Jimmies.
