Irish Car BomB Cupcakes

I decided since it is almost St. Patrick's Day and my husband was having a poker party with his co-workers I would attemptto make cupcakes with beer and liquor, what guy wouldn't love that especially combined in a dessert. They also had a chocolate whip cream center.
You can really taste the Guinness and it really emphasized the chocolate flavor. I ran out of time so the for the filling I used a short cut and mixed a box of chocolate pudding mix with cool whip and pipped it into the center. This is a great shortcut tip and makes a thickened mousse consistency that is great for fillings.

Guinness Cupcakes:
3/4c. Guinness
1 stick butter
1/2 c. cocoa
1 c. Flour
3/4c. sugar
1 tsp baking soda
1/4 tsp. salt
1 egg
1/3c. sour cream

Simmer Guinness and butter in saucepan until melted, add cocoa and whisk until smooth. Cool mixture to room temp then mix in the egg and sour cream (this should have the consistency of chocolate pudding at this point). In a separate bowl whisk together flour, salt, baking soda and sugar. Add the flour mixture to the cocoa mixtuer and beat briefly. Fill lined cupcake pans about 3/4 full and bake at 350F for 17-20minutes (until toothpick comes out clean).  *(this recipe makes 12 cupcakes)

Filling: I used 1 container of cool whip and 1 box of chocolate pudding

1 stick butter
3 c. powdered sugar
4-6 Tbsp Bailey's Irish Cream *(to desired consistency) I used 4 because I was piping my frosting on and wanted it thicker).
