Baked Mini Donuts-National Donut Day

Today is National Donut Day! I am not a huge fan of donuts but if there is a holiday for baked goods why not celbrate. I found a great recipe for BAKED donuts (much healthier than the regular fried ones) and they were so fast to make, I think start to finish it too me about 30 minutes. And since I have a cute mini donut pan they are even less guilt ridden (unless you eat all of them)


 
Cake Donuts Recipe:
2 c. Flour
3/4 c. Sugar
2 tsp baking powder
1 Tblsp butter (melted)
2 eggs, beaten
3/4 c. Milk
1 tsp Vanilla
1/4 tsp cinnamon
1/4 tsp. nutmeg

Preheat oven to 325F
Lightly spray donut pan with cooking spray. Whisk together dry ingredients, and then add wet ingredients to them beating until fully incorporated (see below)
Fill each donut hole 2/3 full (I overfilled mine on accident and they were really puffy (almost lost the hole on the bottom side) Bake 8 minutes or until tops spring back when lightly touched. Coll and remove from pan. While they were baking I whipped up some powdered sugar glaze

Powdered Sugar Glaze Recipe:
1 c. powdered sugar
3 tsp milk *(add 1 teaspoon at a time until desired consistency)
drop of food coloring

Once the donuts were cooled I dipped each in the glaze and topped with sprinkles, these would be good with a chocolate glaze or dipped in powdered sugar or cinnamon/sugar. Sprinkle with nuts, coconut, sprinkles or go the crazy voodoo donut route and add a maple glaze with bacon sprinkles (SOOO Amazing)

If you want to make chocolate cake donuts substitute 1/2 cup of unsweetened baking cocoa for 1/2 cup of flour.

Next time I want to this recipe over at Sprinkle Bakes  which if you didn't know already you can make your own buttermilk by adding 1 Tbsp Lemon juice or vinegar to 1 cup of milk.
