Reese's Peanut Butter Cup Mini Cupcakes

These mini cupcakes were AMAZING and I don't even like peanut butter that much. I used some of the left over batter from the 100 cupcake extravaganza and made some mini cupcakes and since at that time my husband was craving a Reese's Peanut Butter Cup I thought I would make him some. After baking a cooling the chocolate cupcakes


I mixed up my peanut butter concoction: 1 cup peanut butter, 1/2 stick butter and ~3 Tblsp Hot water (to thin it and melt it a little) add the water 1 tablespoon at a time until it is the right consistency (think toothpaste)

I filled my decorating squeeze bottle with the mixture (not the cleanest fill job) and used a wide tip (I think I used a #20). I didn't scoop out the centers of these cupcakes I just poked into them with the tip and injected them like you would a Thanksgiving turkey until I could see the tops start to swell.
Refridgerate for ~30 minutes then Melt chocolate in the microwave for 30second bursts until melted and smooth (* hint you can add a little bit of shortening if you need to help thin your chocolate...it also helps with shine)



Dip the tops of the cupcakes into the chocolate.
