Homemade Lemoncello

Have you ever had homemade Lemoncello? It is so good, you can use it in cocktails baking, cooking or you can use it to marinade fish/seafood

Problem is lemoncello can be pretty expensive to buy so making it is pretty simple and can make great gifts for the holidays too so here is the recipe I used

  • 10 lemons
  • 1 (750-ml) bottle good vodka
  • 3 1/2 cups water
  • 2 1/2 cups sugar
  • pretty bottles with a rubber stopper (Ikea, wal-mart, world market has them for about $5) **Note this recipe made two of these bottles of lemoncello)

Using a vegetable peeler, remove the peel from the  lemons in long strips (reserve the lemons for another use). Using a small sharp knife, trim away the bitter white pith from the lemon peels; discard the pith. Place the lemon peels in the bottle  Pour the vodka over the peels. Steep the lemon peels in the vodka for 4 days at room temperature.
Stir the water and sugar in a saucepan over medium heat until the sugar dissolves, about 5 minutes. Cool completely. Pour the syrup over the vodka mixture. Let stand at room temperature overnight. Seal the bottles and refrigerate until cold, at least 4 hours and up to 1 month.
I made the labels by hand and tied them with a piece of bakers twine.
