These cupcakes were REALLY good. I used a tip from A Cupful of Cake and put half an oreo in the bottom of the cupcake(the side with the creme).I made these cupcakes at the same time I made the Pistachio Ones (posted here). For the frosting I used vanilla buttercream and used the tops of the oreos crushed up and blended into the frosting.
Crushed Oreos (either put the tops into a plastic bag and crush with a rolling pin or mallet or put in a coffee grinder or blender and pulverize)
After you place the oreo in the bottom of the cupcake paper just fill with cake batter and bake as usual.

****Tips: If you decide to use a cake mix add 1 tsp of baking powder to the mix (you don't know how long those boxes have been on the shelf and the baking powder may not be good by the time you use the mix)
For extra moist cake add a box of pudding to any homemade or boxed cake mix. (This will also help with the stability of your cake)
Official taste tester (I am sure you all think my child will be about 300 pounds by the time she is 5, but she only gets about 2/month and she is nice about sharing with me and my husband but loves to be in control of the whole cupcake...hence the pictures with the huge cupcake in her hands).
