Mummy Cake Pops

My friend threw a Halloween party last night for a few friends, it was so much fun and since she is a super fan of Halloween she went all out! I contributed the food labels and the mummy cake pops. 
The pops were chocolate cake mixed with chocolate frosting and then dipped into white chocolate. I followed Bakerellas recipe and book. You can mix in Paramount Crystals to help thin the chocolate or a little bit of shortening so that the chocolate coats evenly and thinly.


After dipping the cake pops twice (to cover the chocolate thoroughly I drizzled white chocolate on the pops with a squeeze bottle and then dropped two royal icing eyes into the wet chocolate.

The eyes I made a few weeks before. (Since they are royal icing they have no fat and will store for years if need be!) I made them with left over royal icing from Karsyn's pinwheels cookies for her party. 

To make the eyes I dropped white icing (a 20 second consistency) onto parchment paper and while wet added black royal icing to the eyes. After letting them dry 24 hours I picked them easily off the paper and stored them in an air tight twist top container.
