Pumpkin/Ghost Cupcakes & the best Chili recipe!!!

For Halloween yesterday Karsyn and I made Ghost and Pumpkin cupcakes (which we gave to our friends) and Chili for dinner,  which is a fabulous recipe. I found it in a Low-Carb cooking magazine *(but add kidney and white beans so it technically isn't low carb after that) and it is really easy to make just throw everything into the crockpot and let it cook!

Chocolate cupcakes with vanilla butter cream tinted orange, orange sanding sugar (Karsyn did the shaking), and fondant stems and vines.

We also made a few ghost cupcakes for friends. These are chocolate cupcakes with a mini cupcake on top (so you don't have an ungodly amount of frosting and for structure to hold the weight of the fondant). Then vanilla buttercream topped with fondant (I cut out a circle by using a bowl that was about 5-6 inch in diameter and a kitchen knife)

Gently drap the fondant ontop of the stacked cupcakes and then glued two royal icing eyes onto the cupcakes (which Karyn loves to eat if I let her have any-they taste just like Button candy

Texas Chili Recipe:
3 pounds chuck beef stew meat, fat trimmed
1 Tblsp minced garlic
1/4 c. chili powder
1 tsp red chili pepper flakes (to taste)
2 Tblsp quick cook tapioca pearls (they sell them in the bulk section of Winco/Fred Meyer) for thickening
1 Tblsp oregano
1 tsp cumin
2 beef bouillon cubes
1 tsp black pepper
1 14.5 oz beef or chicken broth
1 medium onion
1 can kidney beans (rinsed)
2 cans white beans (rinsed)

Place all ingredients into a crockpot and cook on high for 6-8 hours (until meat is fully cooked and tender)
Stir about 1 hour prior to serving to mix all the ingredients thoroughly
Garnish (optional) with shredded cheese, sour cream, onions, or a wedge of lime.

Karysn was a Koi Fish for Halloween. I made the costume from an orange sweatshirt (Men's large- Goodwill $3), orange cupcake wrappers-cut in half and hot glued on, a ping pong ball cut in half/hot glued on and the eye was colored in with a sharpie and an orange ribbon bow (to help identify her as a girl fish). I had to be creative with the arms to shorten them but it worked well when we were out to keep her warm and she didn't have a problem with the sleeves. Orange tights completed the outfit. Wish I had orange shoes but couldn't find any. The only fish in our neighborhood. She had fun with her friends collecting candy and then came back and gave it out to other kids (my favorite was when some teenagers came to the door, she gave them candy and said "Bye kids, have fun")
