Pistachio Tree Cookies

A Christmas goodie, I love making these and they are so pretty to give as gifts wrapped in cellophane and a pretty brown bow. 

Chocolate Pistachio Trees
(Better Homes and Gardens)

1c. butter
2/3c. packed brown sugar
1 egg
1 tsp. vanilla
2 1/4c. all purpose flour
1/4c. unsweetened cocoa powder
3/4c. ground/chopped pistachios

Medium saucepan combine butter and brown sugar, heat and stir over low heat until butter is melted. remove from heat stir in vanilla. Cool 15 minutes then stir in egg, flour, and cocoa powder until combined. Stir in 3/4c pistachio nuts. Wrap dough in plastic wrap and chil 30 minutes.
Preheat oven to 350F, roll out dough on floured surface to ~1/4" thick, cut out tree shapes with a cookie cutter bake on ungreased cookie sheet (I baked mine on a Silmat). Cool completely

3/4c. semisweet chocolate chips
1 T. Shortening
1/2c ground pistachios

Melt the chocolate chips and shortening in the microwave on 1 minute pulses in a microwave safe bowl. Dip the edge of the cookie in the melted chocolate and then immediately in the ground pistachios. Place on the silmat to harden and dry for 24 hours until packaging or eat after 30-60 minutes.
