Best Banana Crunch Muffins Ever





Banana Crunch Muffins

(Yields 12 muffins)


1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup sugar
1/4 cup vegetable oil
1/4 cup melted butter
1 tsp vanilla extract
2 tsp vanilla bean paste
3 ripe bananas mashed
1 egg
1/2 cup chopped walnuts (optional)
1/4 cup broken banana chips (optional)


Preheat oven to 375F  Line cupcake tin with wrappers. 
In one bowl mix the first 5 ingredients together. In separate bowl mix the sugar, oil, butter, bananas, vanilla, egg together. Slowly add the flour mixture to the wet mixture. Fold in the walnuts and banana chips if desired. I have also added mini chocolate chips to this recipe if you want chocolate chip banana muffins. Fill each muffin cup 3/4 of the way full. Top with below recipe

Crumb Topping

1/3 cup packed brown sugar
2 TBLSP Butter
2 TBLSP flour
1/2 tsp cinnamon
1/4 cup unsweetened coconut

In a small bowl mix together the ingredients cutting in the butter until the mixture looks like coarse cornmeal sprinkle over muffin mixture. 

Bake 15-18 minutes or until toothpick inserted in center comes out clean.
